This is great. I ate it with a fork, but I also smeared it all over my turkey sandwich. Yep.

This recipe made about 3 cups. It lasted under a week in my house.

1 bag fresh or frozen cranberries, sliced
1/2 red pepper, diced small
1 jalapeno, diced even smaller
6 kumquats, sliced / or lemon zest
1 large shallot, diced
Juice from 1 orange
1/4 tsp pink or other mild salt, or just sea salt, but taste as you add it.

That’s it! Put it all in a glass jar shake it up and your ready! If it’s to tart for you add a bit more orange juice or a little natural sugar of your choice. You know me, I like it tart 😉
