This is a perfect salad for any Christmas table. Red and Green, a beautiful festive addition.
This is so easy to make, and even kale haters find themselves reaching in for ‘just a little more’.

1 bunch of kale
1 container of cherry tomatoes
3 spring onions
1 avocado
1/2 lemon
1 Tbs Olive Oil
Salt and Pepper to taste

Chop up the kale into fairly small pieces. Don’t get all crazy on me, just chop it up and then do it a few more times. Perfection isn’t needed here ; )
Massage the kale with olive oil for just a minute the kale should turn a brighter shade of green.
Dice up the avocado and mush it up in with the kale. Massaging it til the avocado is smeared all over the kale.
Slice the tomatoes in half, and chop the spring onions all the way into the white.
Sprinkle them on top, add the salt and pepper and finally squeeze the lemon on top.
